Ability to override the name of the cluster to be just the name

For a given cluster name, eg. cluster-abc.
This module transforms the name to cluster-abc-eksCluster-a123456z.
This is not intuitive and adding -eksCluster to an eks cluster is redundant imo.
We should make the name configurable for users as required by them and not add suffixes or even the alphanumeric added due to pulumi auto-naming.
