When exporting to a shape file to a DXF it would be beneficial if elevations and layers would be automatically assigned based on attributes. E.g., if there is a field called 'elevation', that value would be used for the elevation of the feature in the DXF.

I agree. It seems that in the new DXF Exporter this feature is not implemented. Using ogr2ogr seems the only way to do it right now.
