macOS-latest workflows fail with Python 3.6 #29

It seems that macOS-latest workflows now use macOS-11 and Python 3.6 is not available anymore (actions/runner-images#4060).

Actually, it seems like the problem appears only with the v1 action, as the branches with the updated versions are fine.
