No matter what I do, everything is the same "Nocturne" theme after restart

Have you tried opening the Configuration Editor and selecting the radio for the colour scheme you want to be the default? In recent versions you can override it in a Profile, and also choose different themes depending on whether GNOME is in dark or light mode.

Figured out.
Preferences > Edit current profile > Appearance > (Light/Dark) Color scheme drop down.
Works for me. Now color style fixed.
