So we can run rewatch watch and, if needed, rewatch watch --project-path=./apps/demo

I think you can already do this. rewatch watch ./apps/demo should do this if I'm not mistaken. But please do report back if this isn't the case!

I'm talking about not needing to set . and have it by default.

You can do that too, the . is implicit :)
