When using :Dash! it does not use the mapping that was defined in the g:dash_map Hash

Well, :Dash! (with the bang) is supposed to do a global search in all docsets, without caring for the filetype you are currently editing.
:Dash should respect the options set in g:dash_map normally. Is that working for you?

Yes, :Dash is working for me. But why does :Dash! not search with the filetype? If I am in a ruby file and want to search for the text under the cursor, why should the :Dash! command not respect the filetype?

It was designed like that. Otherwise :Dash with or without the bang would do the same thing.
