Replace use of real data in tests with fake data

faker is one library to generate fake test data.

Using fake data has a few advantages - we can get a bit of robustness from trying different options, we avoid any potential problems with dissemination of personally identifying information, and the tests are cleaner because we don't need to specify so much manually.
