Could you provide a pre-build version with every release in addition to the source package?

Otherwise a defunct update package server (e.g. see #4288 ) or other issues that prevent users from updating, blocks users of signal-desktop.

Or, maybe allow using older versions, maybe after showing a warning?

Either a package or something tar-ed and runnable, if that's easier.
