This adds a new notebook classification.ipynb. this is new. simpler, classification note book, that includes univariate/multivariate/equal/unequal length data, ROCKET and HC2 examples and a pipeline classifier. It replaces the two old notebooks 02 and 03.

It also adjusts the single problem loaders to include the PLAID dataset and allows the user to set the return type of load_arrow_head and load_basic_motions (still default to nested pandas though)

@TonyBagnall, would you kindly mind moving changes to the datatypes notebook to a different PR? Difficult to chunk & review if a PR touches a lot of files...
