I can confirm this also happens to me on Notesnook Android v1.8.7 running Android 12, if that is useful information.

Here's what I remember

1. Create note in Notesnook MacOS app (3 separate notes)
2. After creation, assign each note to the Purple color category (by right clicking on each note separately in All Notes list)
3. On Android device, force a sync. No sync errors observed
4. Checking Purple category on Android device, only 1/3 notes exist in category.
5. The other 2/3 notes appear with a Purple title in the UI, but don't actually show up in the Purple category

I can fix this by changing the color category on one of the "missing" notes to some other color, then switching back to my desired color and syncing again
