Change Anonymous Profiles to Have "NULL" Gender Instead of Other

I agree with the sentiment that it doesn't make a lot of sense for anonymous profiles to still have identifiable information (albeit incorrect information in most cases), and setting the gender to null in the anonymization script would make more sense.

@danieljames-dj is this something that can be taken forward with WRT? Seems reasonable to me - I'm not sure who "owns" the anonymization script
