chore: update system test dependencies

Proposed changes

Update system test dependencies:

• Use latest official robotframework version (version 7 is already in the release candidate phase).
• Update other dependencies (no major updates)
• Bump is minimum required python version to 3.8 as robotframework v7 will required 3.8 (so this is preemptive)

Types of changes

• Bugfix (non-breaking change which fixes an issue)
• New feature (non-breaking change which adds functionality)
• Improvement (general improvements like code refactoring that doesn't explicitly fix a bug or add any new functionality)
• Documentation Update (if none of the other choices apply)
• Breaking change (fix or feature that would cause existing functionality to not work as expected)
