My solution, as per Tom's initial suggestion:

This auto-assigns deals to a pipeline stage based on their CM - the issue is that it doesn't attach the contact person to the deal - I would have to manually find that person and add them in. This is because an organisation can have multiple people, but a person can only have one organisation; if I try to auto-assign the contact person to the organisation, it asks me to specify who - but obviously we don't know this at this stage.

Proposed solution: Can we store the organisation contact person's name, phone and email at the organisation level as a custom field? That way I can have PD create a person with those fields and automatically attach them as the contact person to the deal.

SIMPLER SOLUTION:

Could Hermes just assign the client_manager to the deal depending on which support_person_id has been created for the organisation?
