Horse in a saddle
Place an item frame on the ground and put a saddle in it. Smash a horse standing on the item frame with an anvil. The horse will get compressed into the saddle.
Drop to summon a horse and take the saddle off that horse to unsummon it
It's just an average horse, but portable
Can be used to craft Skeleton Horse in a saddle
