[SSR] Allow user to pass `--ssr` without `<entry>`. #1877

This is a follow up of #1876.

Your plugin can check if it's in an SSR build and then use the config hook to inject your SSR entry to build.rollupOptions.

Seems like it would work 👍 but the problem is that running $ vite build --ssr is forbidden; the user is forced to set an <entry>.
