docs(comparisons): add paragraph breaks, improve grammar #3445

The paragraph breaks make navigating the Jest comparison easier, particularly for readers who do not already use Vite. Also, change “is building vite-jest” to “built vite-jest”, because I see that https://github.com/sodatea/vite-jest has not been updated in 1.5 years.
