Documentation requires updating a section about mocking schema #1127

It looks like the documentation section about mocking GraphQL schema is obsolete.

API of graphql-tools has changed.

I've encountered this issue when I was following the guide and hit an error.

Would be great to have an example up to date with the current version of grapql-tools
