Rather than worrying about build scripts, shorthands, or any complications, I just started writing a few tests for the RS spec. Most of these try to check conformance of XML processing. I also made a version of the Acid2 test, as that seemed one way to test the requirement about reading systems with a viewport:

If it has a Viewport, it MUST support visual rendering of XHTML Content Documents as defined in § 4.3.1 CSS Conformance.

These will all need a lot of work. The main goal was to have some tests to help uncover issues in the spec, such as w3c/epub-specs#1456.

For convenience, I made a folder that just has EPUBs in it, in addition to the unzipped folders.
