Doctrine handle quite correctly database migration. Thanks to `doctrine:schema:update`
And fix some deps instead of using dev tags

Most change are related to to the
ChoiceTypeandsetDefaultOptions. One tricky was related to theTokenStorageInterface.And remove Phinx.
Doctrine already handle database migration. We don't more tools.
And I also fixed some deps instead of using dev tags
