WT-3853 LSM version 1 metadata incompatibility

Commit 3a2f5bf introduced a backward-incompatible change into the LSM
metadata by adding a new field (lsm.merge_custom) and requiring it
appear in the metadata. Handle a not-found error when searching for the
lsm.merge_custom field.
