Hi,

I've just pushed a change that allows kafka parameters to be set via environment variables (e.g. https://github.com/wurstmeister/kafka-docker/blob/master/fig.yml#L13)

the syntax for your parameter is:

KAFKA_AUTO_CREATE_TOPICS_ENABLE: 'false'

Please let me know if that works for you.
