This is only one "temporary" thing before someone is writing more serious and nice than i is doing.

All "normal" behaving devices that is "talking" Zigbee standard 1.X HA and LL and newer Zigbee 3 is working out of the box. Example One IKEA family pack with one bulb and the E1743 On/Off Switch is working without problem steering the bulb from HA and the remote without and quirk added in ZHA but events and battery status is not working in ZHA.

So by default is most / nearly all light bulbs working out of the box but controlling devices its little more tricky and can being that they dont working at all or only partly. Xiaomi HA switches cant sending commands to lights without having one working quirk for it in ZHA. IKEA 5 buttons remotes can doing it but not all functions is understanded buy ZHA and the battery status is not being processed in to ZHA.

Devices that i need quirk to working at all is more or less all old no Zigbee 3 Xiaomi / Aqara devices, tuya devices that is no lights (exception the Christmas tree lights that is missing nearly all good thing if not having one quirk) and manny controlling devices and HA sensors.

I think its good doing one generell list that is working out of the box like "OSRAM lights is working except medell 23 and 536" so dont need with listing all the devices that is working out of the box like Z2M is doing (Z2M must all devices being waitlisted for working also ZLL lights that is 110% Zigbee standard).

And then listing devices that have being supported with quirks and what functions is being added and not working (like 5 click with both pads on the first gen Aqara dubble switches is not supported).

What i finding interesting is wath application profile the device is having befor quiriking it like the new Xiaomi Opple switch that is one ZLL (sending light commands native) switch but can being configured to being one ZHA (sending click click ala HA) switch and can being for both ZLL and HA with right quirk and config. And the old Aqara HA switches is useless using with lights because of that.

Philips HUE Tap I think need ZGP proxies routers for working (with or without Zigbee 3).

And so on. I think its can being very much work but can also giving user good help for getting their system working well with right devices in their systems that is working together.
