Sidekiq 7 requires redis 6.2+, which isn't available in a lot of distros yet :( So lets wait with this for a while. This partially reverts commit a595055.

As discussed in #8431 (comment), I was wrong about sidekiq only requiring redis 6+, it actually requires 6.2+ for some reason. And as a lot of distros still only have redis 6.0 only, lets downgrade sidekiq again for now. 馃槥
