Add documentation for featured in 6.1 release

Adds documentation for the features introduced in:

• Bundle PostCSS Global Data Plugin with default configuration #389
• Feature: allow defining module scripts through project config decoupled from blocks #388
• Add support for scriptModule and viewScriptModule assets #372

It also at the same time renames the useBlockModules mode to useScriptModules
