With the additional work on the Eight Day Week microsite, I went ahead and added additional screenshots to cover the plugin functionality as well as updated what's displayed for screenshots in the readme files. |

Description of the Change
In working to create a microsite for the plugin, it was noted that our screenshots needed to be updated to current WP Admin styles. This PR replaces screenshots with current WP Admin styles.
