You are correct, the 4 most recently added timezones (IST, Sasketchewan, Australia north & south) are missing from the dropdown menu... sorry about that! (note that this is only a UI problem, so if you are updating from a build where you could select the timezone it should remain in place)
As a workaround, you can set the timezone to UTC and put 19800 in the offset field.
Will fix ASAP :)

This is now fixed in master and will be included in the next release :)
