integrate a fix for chai pdf integration
this fixes already converted documents not being found on restart sometimes
as well as updates the hash algorithm to be rainbow-128 (the fastest 128 bit quality hash in existence as reported by smhasher 3 here: https://gitlab.com/fwojcik/smhasher3/-/blob/main/results/README.md#passing-hashes)
it also updates the rebuild_hashes and chai server to be es modules and use import syntax rather than require. Good!
