EpiDoc addresses changes of hand with the <handShift> element, in conjunction with <handNote> in the header. Please forgive the question @andreabernini but what do you mean by "lectional signs"?

I'll try to explain: a papyrus may have the word ως in one hand, but above
the letter omega there could be a breathing mark in a second hand. Andrea
asks how to show that the breathing mark is in a different hand. Breathing
marks are indicated in the XML as hi rends, e.g., ὡς.
The XML doesn't allow one to put a handshift around just the breathing
mark, it seems.

Thanks @rla2118 I understand now. I'll raise this question on the markup EpiDoc list.

This is for me to address so we can decide whether to move forward now or to defer.
