The latest version of the source plugin restores incremental updates speed. As far as I can tell it makes Gutenberg and WooCommerce work too which is a huge plus! I'm not sure if incremental data updates for woo work but I pointed my Gatsby site at an alpha testers WP instance with wp-graphql-woocommerce installed and it fetched the data properly!
