Hi would this make a difference if the VM shares the same internet connection as the host ?
Normally it would at least hide my ip adrress is that correct ?

I think you are confusing a VM with a VPN. A VM will have zero effect on you networking traffic. The traffic from the VM goes out over the same network as the host in the end.

I guess it'd also protect me from potentiel infected Windows recipient ?

It basically makes any potential intrusion not get access to your host system, so yeah. I'm not a security researcher so I won't comment any more on it. There is likely some information online about security implication of virtual machines.
