This seems to be a logic bug, setting the app language to en-US in the preferences will select the system default language. Setting it via the system app settings will however work.

Seems as if this is mainly due to https://issuetracker.google.com/issues/243119645 Though we do have an issue in that we don't explicitly handle the current device language.
