Re-enable gcc matrix in Travis CI #7525

Thanks to @Nekotekina for the eye noticing that both the builds were using the same cache previously.
Now we specify the compiler: travis variable, which enables them to have difference caches.
The GCC build is about 5 minutes behind the clang build, but it's good to be testing both compilers
