docs: fix language errors

Our docs are haunted by countless language errors. Running the whole thing through a spell checker would massively improve readability of our documentation.

Is this still valid ? Im happy to go hunting for those that haunt you but I do have a spell checker on the go and I see very few suggestions other than token names and terms like unbonding
