Update all wiki pages, diagrams and READMEs

Most of our docs are out of date.

In case anyone would like to assist here: feel free to poke the 'responsible' people to find out how things work now! These people are myself and @ajuvercr for the backend, and @wschella and @Robbe7730 for the client.
While this might not be an ideal starting issue, it might be very good to get an understanding of MOZAIC as a whole, and all help would be greatly appreciated.

I was going through the Setup section of the README using Windows and I ran into some errors with this command:

cargo run ..\planetwars\config_examples\stub.config.json

The problem is that stub.config.json specifies the commands as python3 but for Windows the command needs to be just python. An easy fix for this would be to just create another config file for Windows users and update the README accordingly with commands for Linux, and Windows users. I also noticed a few minor things that could be fixed on the README so I could create a PR for these changes.
