Fixed CI randomly failing while installing the dependencies
- Added the LTS Node version (16) to the strategy matrix.
- Removed windows-latest and macOS-latest operating systems from the strategy matrix.
- Fixed caching issue
  - Replaced the bahmutov/npm-install with the official actions/cache GH action.
Bumped dependencies using ncu
