Added a bunch of documentation for code merged from #626, and did a bit of organizational stuff.
Only real functional change is to take a method to encode a string which was previously force-unwrapping and set it up to
throwinstead, since consumers of the SDK should be able to choose if they want to crash rather than just failing. Totally missed that in the earlier review 🤦♀️
