EmrServerlessStartJobOperator doesn't currently support providing a job name or tags.

They are all optional according to the API and it looks we can add them to config parameter. Do you think it would be good to provide them as a parameter of the operator?

Yea, we can provide a generic config similar to how we did in the application. I added this recently, but #14 adds full support and will close this when merged.
