As DockerHub image non existant, update the documentation for Compose to build your own image instead.

Unfortunately, I'm not sure who owns the btcsuite docker hub repo otherwise I'd happily push new images there. |

As DockerHub the image is now non existant, this updates the documentation for Compose towards building your own image instead.
