feat(docs): add utility examples

Updates

• Adds utility examples from older Storybook demos to docs site
• Bump @types/node, eslint-plugin-jsdoc, angular, lerna, typescript-eslint, dompurify, @carbon/styles, @carbon/react, @carbon/icons-react, vitest, highlight.js
• Fixes export of enum from core (was previously exported with type keyword)
