Switch explorer to run on preview & clear TVL on Finalized

🔄 We switch the explorer to work on preview after the sanchonet respin

This is because sanchonet depends on cardano-node running on 8.10.0-pre, and this version brings breaking changes to the cardano-api (which involves plutus changes).
For that, we would need to use this branch #1388, but it makes the whole thing likely more complicated and not something we want to merge anyways before we don't have a 8.10 cardano-node release which is also supported on preview/preprod and mainnet.

• This PR also fixes the misleading TVL being displayed as it was not cleared on Finalized.
