...plus maybe just double-click wad and pk3 files too.

Well, I changed Info.plist, so now you can double click wad/pk3 files, or drop wad/pk3 files onto the app, and it starts GZ3Doom.

But gz3doom does not actually use those files.

It seems getting the dropped files to be used as command line arguments could be tricky.
