Unicode 15.0.0 is released today: https://www.unicode.org/versions/Unicode15.0.0/
This PR also ensures that grapheme properties are generated from the most recent Unicode version. (Previously they were hardcoded against 13.0.0, so we actually missed 14.0.0.)
