I found the following field in the app configuration:

INTERACTIONS ENDPOINT URL

You can optionally configure an interactions endpoint to receive interactions via HTTP POSTs rather than over Gateway with a bot user.

However, I haven't found a single place where this is documented, so I don't know where to start. I could set up an endpoint to check what I receive, but I don't really understand how to do it without a bot user. I'm not even sure if the text means that I don't need a bot user or if I need it anyway. Could you clarify this somewhere please?

Does this work like sort of an outgoing webhook? Or is it just a different interface for the Gateway? Do I still need to add a bot to a server to receive events through an endpoint, or can I link my app up directly, similar to standard webhooks? (the latter would be preferable for me)

That is for slash commands which are not released yet, therefore they are not documented yet. They will be released later this year.
