`make demo` assumes elasticsearch is in development mode (no persistent storage, only one node etc.). To prevent the bootstrap check from failing for the OS `vm.max_map_count` kernel setting, set parameters as documents in https://www.elastic.co/guide/en/elasticsearch/reference/current/docker.html#docker-cli-run-dev-mode.

As per the commit descriptions, main thing is to ensure Elasticsearch will start regardless of missing
vm.max_map_countdefinition.
