Simply remove the microSD card from the EV3 (when it is powered off).
It works like a dual-boot system. The official LEGO firmware resides in the built-in 16MB flash memory of the EV3. Ev3dev resides on a microSD card and does not touch the flash memory. If a bootable microSD card is present when the EV3 is turned on, then it boots from the microSD card. If the microSD card is not bootable or is not present at all, then the EV3 boots from the built-in 16MB flash memory.
