Delete and re-create the /docs Git sub tree

I'm creating an issue here to increase visibility.

As a reminder:

• The only manual commits to /docs in this repo is documentation for new and unreleased features (which follows the code)
• /docs get merged into hugoDocs at release time.
• hugoDocs gets merged into /docs with the pull-docs.sh script at intervals, but usually only right before a new release.
