Apparently the latest version of meson (0.57.0) somehow broke systemd OSS-Fuzz builds. It seems there is another meson (0.57.0) regression preventing clang from building systemd with --optimization=3 -Db_lto=true By analogy with google/oss-fuzz#5199 let's just switch to 0.56.2 for the time being

to be able to control our dependencies right here without sending PRs like google/oss-fuzz#5199 and google/oss-fuzz#5601. It should also allow us to pin meson to let Dependabot keep track of it and jump from one version to another without breaking anything
