With 056444e (and a couple of later fixes...), one can manage as many servers as needed in the GKE deployment; and adding a new NFS server to an existing deployment and calling up just does what's needed (i.e. create the NFS server and restart services).

Plus, one can manage storage separately (gcloud compute disks --help) and then use the option reuse-data-disk (cf. config-file help).
