Java updated from 11 to 17 to better match Gradle 8.0 requirements

Since Gradle 8.0 discourage us to use transitive R, each reference was moved to the appropriate module
Missing rules added
Updating the CI as well
Ops. The version inside com.escodro.android-library.gradle.kts was hardcoded to Java 11. This was breaking the communication between the repository and data source layers. Everything is fixed now.
