The only elegant way to organize images and other post attachments is inside folders for each post. However this seems to have been overlooked, unless I am missing something.

I agree that has a certain elegance. And you are right I don't think Jekyll supports it. If it did though, I'm pretty sure it would need to be some sort of configuration option in order not to break current style.
